Researchers from the Università degli Studi di Udine (Italy) demonstrated the feasibility of viable PCR in wine making, by monitoring viable populations of Oenococcus oeni, providing a fast and useful tool to identify the right corrective measures to stimulate or avoid bacterial growth and thereby to improve wine quality, avoiding the time-consuming of plate count methods.
